“Traditionally in the Cyclades islands, grilled sun-dried octopus is served on its own, without sides. It is not pre-boiled giving it a chewy texture rather than a soft one. Th e exterior has a slightly charred appearance from grilling. To fully enjoy it, it should be sliced very thinly, per every suction cup. Some love it, some don’t – but we locals absolutely adore it. -
